This super quick pasta is so easy to make! You can whip it up in less than an hour!
Here are the ingredients:
*I’m not a fan of measuring ingredients so please bear with me. The amount of chicken/ pasta/ basil you will use depends on how many people you would like to serve this dish to
- 2 pieces of Egglant
- 1/2kg Chicken breast fillet
- Pesto sauce (optional)
*1/4/ cup Olive oil if you’re not going to use Pesto Sauce
- A few leaves of fresh basil
- Dried basil (McCormick or any other brand)
- a pinch of salt
- 500g of pasta
*For a healthier option, you can use WHEAT pasta
Prepare your pasta. You can use any type of noodles you prefer. Sometimes I use linguine, and sometimes I opt for pene. Cook according to instructions. Set aside.
Next, cook your chicken. Cut it into small bite sized pieces, then season it with a little salt. Saute in a teaspoon of oilive oil and set aside.
Prepare you eggplant. Wash it well, then cut it. I prefer these to be julienned. Saute it quickly on the leftover oil from your chicken. Set aside.
Cook your pesto sauce in low heat. Let it simmer. Season as desired. Once done, mix in your cooked pasta.
*If you’re not using pesto, then saute 1/4 cup olive oil, cut fresh basil leaves and dried leaves. Season with a little salt. Let it simmer and mix in your cooked pasta.
Once you’ve mixed the oil well with your pasta, it’s ready to serve. Garnish with chicken breast fillet, eggplant, fresh basil leaves, dried basil and parmesan cheese. Voila! You’re done!!
*You can also add your OWN ingredients like olives!! 🙂
